Sometimes at another restaurant, sometimes a food type that is popular Cajun, Thai, etc.

Thai food was popular when we first started and everybody was running to Thai restaurants — and dipping everything into peanut satay sauce. I thought the sauce was an adult way of eating peanut butter and I still do — adults getting a peanut butter fix. In , when we were opening the Brentwood restaurant, I came up with an egg salad pizza.

It was the same week the government came out with a report that eggs were very high in cholesterol. What are the trends in restaurant menus today — and how have they changed over the last two decades? I think the trend in restaurants has certainly been toward California cuisine — to impress you with quality and design, how pretty it looks. But I think people have gone back to heartier dishes and more basics.
